Watermelon & Halloumi Salad

This cold salad is perfect for summer bbq’s or even as a snack.

Watermelon & Haloumi Salad

Ingredients

  • 1/2 Watermelon
  • 400g Halloumi
  • 1/2 Red Onion
  • Bunch of Mint
  • Lemon Juice
  • Olive Oil

Method

  1. Cut haloumi into thin slices and fry until golden and crisp. Set aside to cool.
  2. Cut watermelon into 2 cm cubes and thinly slice red onion.
  3. Place on a plate with torn mint leaves and haloumi.
  4. Combine 2 parts olive oil to 1 part lemon juice.
  5. Drizzle dressing over watermelon and serve.
