This cold salad is perfect for summer bbq’s or even as a snack.
- 1/2 Watermelon
- 400g Halloumi
- 1/2 Red Onion
- Bunch of Mint
- Lemon Juice
- Olive Oil
- Cut haloumi into thin slices and fry until golden and crisp. Set aside to cool.
- Cut watermelon into 2 cm cubes and thinly slice red onion.
- Place on a plate with torn mint leaves and haloumi.
- Combine 2 parts olive oil to 1 part lemon juice.
- Drizzle dressing over watermelon and serve.
