GF Banana Bread 

Tonight we made some gluten free banana bread! The recipe was originally adapted from Ambitious Kitchen. We thought we would add a thin layer of chocolate icing for a Sunday treat. Without the chocolate, this recipe is also dairy free!!

 

Ingredients 

  • 4 medium ripe bananas
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract
  • 1/4 cup of almond butter
  • 2 tablespoons of coconut oil (softened)
  • 2 eggs
  • 1/2 cup of coconut flour
  • 1/2 teaspoon of bicarbonate soda
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • 1 tablespoon of chia seeds
  • 1 tablespoon of shredded coconut

Icing

  • 6 cubes of dark cooking chocolate
  • 1/2 tablespoon of shredded coconut

  

Instructions 

  1. Preheat the oven to fan forced 160 degrees
  2. Add all ingredients into an electric mixer
  3. Mix until smooth batter consistency
  4. Place in non-stick baking tray
  5. Cook for 25-35 minutes
  6. Place on a wire rack to cool for 20 minutes
  7. Melt cubes of chocolate over a double boiler
  8. Apply to cake & add coconut flakes
