Dinner: Easy & Healthy! 

Tonight I made a delicious dinner with quinoa, veggies, chicken & a side of avocado and feta. Without much in the kitchen, I just made do with what I had! Definitely a must try! 


  • 1/2 cup of quinoa
  • 1 free range chicken breast 
  • 1/2 avocado
  • 1/2 a cube of Danish feta
  • Sweet potato & pumpkin (amount to preference) 
  • 1/2 lemon
  • Mix lettuce
  • 1/3 teaspoon of sea salt


  1. Rinse quinoa in cold water 
  2. Place quinoa on stove with 1 cup of water until boiled
  3. Stir gently then simmer with a lid on the pot for 25 minutes (until water is no longer visible)
  4. Cut up sweet potato & pumpkin, place on a tray with softened coconut oil & thyme 
  5. Cook for approximately 15-20 minutes & rotate veggies 
  6. Mash avocado with sea salt, lemon & Danish feta
  7. Cook chicken
  8. Serve & Enjoy! 😊

💡 Did you know that quinoa is considered a full protein! It is high in fibre and contains essential vitamins and minerals
