Bacon and Zucchini Fritters!

Fritters are a great addition to your healthy recipe book! You an add as many ingredients as you want, changing up the combination each time!

Below is tonight’s fritter recipe….seriously delicious

Ingredients:

  • 4 pieces of short cut bacon
  • 2 eggs
  • 1/3 cup of coconut flour
  • Pinch of bicarbonate soda
  • Tablespoon of chia seeds
  • Danish feta (as much as you like)
  • 1 x lime
  • Chives
  • 1 x large zucchini
  • 1 x avocado
  • 1 x red onion
  • 1 x punnet of cherry tomatoes

How to cook to perfection:

  1. Cut bacon & cook on medium heat in the frying pan until crispy
  2. Crack eggs into a bowl and add chia seeds, flower and bicarbonate soda
  3. Grate zucchini
  4. Cut chives into small pieces
  5. Roughly cut half of the cherry tomatoes
  6. Squeeze half a lemon
  7. Add above ingredients into egg mixture and stir until thick
  8. Use your hands to mould the fritters to your preferred size & place on the fry pan at medium heat (roughly 5 mimnutes eachs side)
  9. Dice avocado, cherry tomatoes and red onion into a separate bowl for salsa
  10. Plate up fritters & top with salsa
  11. Serve with a slice of lime 👌
