Baked Vegan Blueberry, Banana & Almond Oatmeal

I am always looking for healthy treats to cure my sweet tooth. This oatmeal is the perfect option! I like to make this in advance as it keeps well and is the perfect grab and go when I have a busy week.


Ingredients

1 cup Rolled Oats

2 Bananas

1/2 cup Frozen Blueberries

1/2 cup Dates, diced

1/3 cup of Coconut Milk

1/4 cup Almonds, chopped

1/2 cup Shredded Coconut

2 tbs Cinnamon

Drizzle of honey

Method

  1. Preheat oven to 180 degrees.
  2. Place one cup of oats in a bowl and cover with boiling water. Soak for 10 minutes or until the water is absorbed.
  3. In the meantime chop banana, dates and almonds.
  4. Stir in the remainder of the ingredients into the oats. Spread evenly into a baking tray. Top with additional nuts and coconut.
  5. Bake for 20 minutes.

You could swap ;

Bananas and blueberries for seasonal fruits

Cinnamon with 1tbs cacao and 2tbs peanut butter 

Dates with 1/2 cup of saltana’s
