I am always looking for healthy treats to cure my sweet tooth. This oatmeal is the perfect option! I like to make this in advance as it keeps well and is the perfect grab and go when I have a busy week.
1 cup Rolled Oats
1/2 cup Frozen Blueberries
1/2 cup Dates, diced
1/3 cup of Coconut Milk
1/4 cup Almonds, chopped
1/2 cup Shredded Coconut
2 tbs Cinnamon
Drizzle of honey
- Preheat oven to 180 degrees.
- Place one cup of oats in a bowl and cover with boiling water. Soak for 10 minutes or until the water is absorbed.
- In the meantime chop banana, dates and almonds.
- Stir in the remainder of the ingredients into the oats. Spread evenly into a baking tray. Top with additional nuts and coconut.
- Bake for 20 minutes.
