Healthy Pork & Veggie San Choy Bow

San Choy Bow is a great dinner and lunch option it is quick and easy to make. It is the perfect healthy meal to share with friends.


  • 1 Carrot, grated
  • 1/2 Cucumber, sliced
  • 5 Mushrooms, sliced
  • 500g Pork Mince
  • 1 tbs Minced Ginger
  • 1 tbs Minced Garlic
  • 1 tbs Coconut Oil
  • 1/2 cup Snow Peas
  • 1/2 cup Bean Sprouts
  • Iceberg Lettuce
  • Chilli Flakes
  • Fresh Lime
  • Mint
  • Coriander


  1. Mix together all of the veggies in a separate bowl.
  2. In a saucepan heat ginger, garlic and coconut oil. Brown pork mince, allow to cool slightly.
  3. Place meat in washed lettuce cup and top with veggies.
  4. Squeeze lime and place mint and chilli flakes on top.
