San Choy Bow is a great dinner and lunch option it is quick and easy to make. It is the perfect healthy meal to share with friends.
Ingredients
- 1 Carrot, grated
- 1/2 Cucumber, sliced
- 5 Mushrooms, sliced
- 500g Pork Mince
- 1 tbs Minced Ginger
- 1 tbs Minced Garlic
- 1 tbs Coconut Oil
- 1/2 cup Snow Peas
- 1/2 cup Bean Sprouts
- Iceberg Lettuce
- Chilli Flakes
- Fresh Lime
- Mint
- Coriander
Method
- Mix together all of the veggies in a separate bowl.
- In a saucepan heat ginger, garlic and coconut oil. Brown pork mince, allow to cool slightly.
- Place meat in washed lettuce cup and top with veggies.
- Squeeze lime and place mint and chilli flakes on top.
