I noticed Sweet Potato Toast on Instagram the other day and couldn’t not try it. It combined two of my favourite foods sweet potato and peanut butter. To be honest I thought it was too good to be true!
- Sweet Potato
- Natural Peanut Butter
- Half A Banana
- Or Avocado
- Or Hummus
- Or Cherry tomatoes
- Cut the sweet potato in 1 cm slices length ways (skin on).
- We tried using a toaster but in the end a sandwhich press proved to be the easiest and most effective. Place the sweet potato in the sandwhich press between two sheets of baking paper and cook for 5 minutes.
- Top with your favourite toppings! We decided to treat our sweet tooth with natural peanut butter and banana but you could also use avocado or hummus and cherry tomatoes.
