Vitamin Packed Veggie Soup

I cannot stress enough my appreciation of a good vegetable soup. Not only is it the perfect way to warm up on a cold winter’s day but it is low in calories and high in so many vitamins. The more colours you add the more vitamins it will have! Feel free to chop and change (literally) the veggies to suit your preferences. I never make two the same, this is just what I whipped up today!

Ingredients

  • 2 Parsnips
  • 2 Carrots
  • 1 Zuchinni
  • 1 Small Sweet Potato
  • 1/4 bunch of Celery
  • 1 Brown Onion
  • 4 cloves of Garlic
  • 1 tin Four Bean Mix
  • 1 tin Corn
  • 2 cups of Vegetable Stock

Method

1. Cut all of the veggies into 1.5cm cubes. Drain the beans and corn.

Slow Cooker: Out of pure ease (and laziness) I throw all of the ingredients aboveย into a slow cooker on high for 4-5 hours.

Stove Top:ย ย Brown the onion in a saucepan. Add in the remainder of the veggies and cover with stock, bring to a boil and then simmer for 1-2hours.
